CAiTOの厨房で腕を振るうのは、「Nomad」や「TACUBO」など名だたる名店で経験を積み、カステリーナグループの統括料理長を務める内田恒太。シンプルでありながらも素材の存在感を尊重し、緻密な技術で一皿へと昇華させます。シェフの故郷である北九州をはじめ、全国の信頼できる生産者と直接対話を重ねて仕入れた生命力あふれる食材を使用。「口に入れた時のわずかな違和感と、喉に落とした後の美しい余韻」をテーマに。ここでしか味わえない驚きと深い感動をお届けいたします。
At the helm of the kitchen is Kota Uchida, the Executive Chef of the Castellina Group, who honed his skills at renowned establishments such as "Nomad" and "TACUBO." His approach respects the inherent qualities of the ingredients while elevating them into exquisite dishes through meticulous technique. He sources vibrant, high-quality produce through direct dialogue with trusted growers across Japan—including those in his hometown of Kitakyushu. Guided by the concept of "a subtle, intriguing sensation upon the first bite, followed by a beautiful, lingering finish," he delivers a unique dining experience filled with surprise and profound emotion.
